A Pennsylvania Dutch tradition is having pork and sauer kraut on New Years Day to bring you luck for the year.
Here’s my version.
Take a pork tenderloin and double butterfly it. Stuff it with sauer kraut and tie it up with cotton string.
Put it in a smoker (with Sassafrass wood) and smoke for at least four hours. Finish off in oven if necessessary.
Mashed red skin potatoes with skins left on.
Home made bread with honey or real maple syrup.
(and Oh! Yes! 15 year old Glenfiddich)
