Well what type of symbol do you want why dont you put something that she likes? If she likes butterflies for example her name with a butterfly or if she likes a certin type of bird or the beach or something like that.

I agree with KnightHawk but that is alot for your bicep. What about just a scroll with that quote and on top of the scroll you can have like 3 deamons holding it. I have something simmilar but mine is a gargoyle holding the scroll.

The thing about cover ups is they have to be dark. With the color of that pic i dont think it would work it looks to light. I think a dark and almost solid pic would work better like a panther or a dark shaded rose for example. Just my opinion.
